copy the gabble.manager file to ~/.telepathy.
gossip discovers connection managers by querying those files, either
in /usr/share/telepathy/managers, or ~/.telepathy.

Ideally you would install your connection managers in /usr, and gossip's
wizard will give you an option to set up accounts for your different
cms.
